Ahhh hello everyone! YES I KNOW…I’ve been gone for a really long time. I’m a terrible excuse for a blogger. BUT I hope my story and my AMAZING mouth-watering recipe for Strapatsada will help you forgive me. I have had such bad luck these past few weeks… I’m actually asking myself if I did something really bad in a past life.
So first, the mouse trackpad on my MacBook broken. But I am also in Lithuania where there is no real Apple Store to get it fixed. And on top of this I misplaced my camera memory card somewhere while moving into my new apartment in Switzerland. And I’ll be away until the end of July. I had a ton of new recipe pics on there! So between not being able to use my computer mouse and not having my pics… I haven’t uploaded any new recipes. SHAMEFUL. But I still had to explain myself to you all.
I did manage to find a recipe on my computer that I haven’t uploaded yet. And I was able to click on my mousepad just enough times to send myself the pics to upload on The Greek Glutton from another computer. So here we are! I like the timing of this recipe, actually, because 1) it’s almost father’s day and this is a great breakfast meal for dads 2) it’s summer and I find this to be a summery recipe.
Last summer actually, I was in charge of redesigning the menus for the hotel I worked for. And strapatsada (or ‘kagiannas’) was often one of the breakfast options for guests. I can’t remember the origin of the two different names for this dish. But they both refer to this amazing mix of eggs, tomato, and feta cheese. YUMMMMMMMMMMMMM. I know scrambled eggs might not seem like the fanciest of dishes, but if it is good enough to be served at a 5 star hotel in the Greek islands, it is good enough for me!
You can serve this strapatsada with some beautiful toasted bread… Itastes more decadent and sinful than it really is. Eggs are a great thing to eat at breakfast as they are packed with protein and not many calories, which keeps you full and can assist with weightloss. Remember, overall health begins with eating a good breakfast! Tomatoes are also a great source of vitamins and potassium. Feta is also lower in calories and fat than many other cheeses, and while it is salty, a little goes a long way.
HmmmmmMMMmmm I’m getting hungry just typing this! Warm gooey eggs paired with fresh tomato and salty cheese on crunchy bread….HEAVEN! Ok, so now that you’ve forgiven me for my late post….you can log off the computer and go cook this immediately!!!
The Greek Glutton
Yields 2-3 servings

Ingredients
- 1 onion, chopped
- 2 tbsp olive oil
- 6 eggs
- 1 can diced tomatoes
- 1 block feta
- Paprika
- Bread (optional)
Instructions
- Heat up the olive oil in a pan
- Saute the onion until it looses its color (about 5 minutes)
- Crack the eggs into the pan
- Keep pushing the eggs around as they cook to make scrambled eggs
- Add the tomatoes and feta and mix in the pan
- Serve immediately with bread (optional)
